- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 tsp gelatin powder
- 4 tsp cold water
- 1 tsp vanilla extract
Measure cold water into a microwave safe bowl, and sprinkle gelatin on top. Allow to bloom.
Meanwhile, fit your stand mixer with a whisk attachment and add the cream and sugar. Mix on low speed until combine, then gradually increase speed every 5 minutes.
After your gelatin has bloomed (5 minutes) microwave it on low for 10 seconds at a time. Do NOT overheat. The liquid should be thin and all gelatin dissolved. Allow this mixture to cool, but don’t let it get too cold or it will begin to solidify.
When your cream has been beaten to medium peak stage, slowly add the gelatin, increase the speed, and beat quickly until stiff peaks form
