- 3 1/2 cups whole milk
- 1 1/8 cup white sugar
Add milk to a 4 quart, heavy bottomed saucepan and heat to a simmer
Gradually add the sugar in small amounts, allowing it to fully dissolve before adding more
Turn heat to medium-low (If you’re using an induction burner, bring the heat down to 3-4)
Simmer continously for 30-45 minutes or until the mixture becomes noticeably darker and thicker. When it’s done there will be an obvious visible change in consistency, and the mixture will be reduced by half.
Cool off in an ice bath and bring it down to room temperature before covering and refrigerating
Yield: 1 3/4 cups or 14 oz
